Asian-Style Chicken Noodle Soup

An easy but authentic-tasting, Asian-style soup.

 

Ingredient list

150g rice noodles
1.5 litres chicken stock
500ml water
2 star anise
4 tbsp tamari sauce
1 cinnamon stick
1 tsp sliced ginger
2 spring onions, shredded

Preparation

Place noodles in boiling water for 5 minutes, then drain and set aside.

Put chicken stock, water, star anise, tamari, cinnamon and ginger into a saucepan and cover. Simmer over medium heat for 5 minutes*.

Add the chicken fillets and cook for 5-7 minutes.

Remove and ‘shred’ the chicken.

Return the chicken to the saucepan with the noodles and spring onions.

Cook for 3 minutes or until the noodles are heated through.

Serve in deep bowls.

 Tamari sauce is a wheat-free version of soy sauce, therefore it is suitable for those on a gluten-free diet, but not the Best Bet Diet.
